Winter has really come over Denmark lately! Wherever you look the landscape is covered in white and a
chilly wind blows silently day in and day out. No matter how much I love taking a stroll in the
beautiful winter wonderland, I must say I'm not a big fan of chilly winds. That has made me stay
inside with a (lot of) cup(s) of tea, some good books and some delicious homemade apple buns.
I've had the recipe for these apple buns since I was in seventh grade and have made them at least five
times doing every winter since. They take almost no effort to make and you sure have most of the
ingredients already. I hope you will do yourself the favour and pleasure of making these buns on a
day where a chilly wind blows outside and you need some delicious food to keep you company
when you're cuddling up with yourself in your most comfortable chair with a cup of tea by your side
and a good book in your hands!
Ingredients
FOR 10 APPLE BUNS
- 1 Elstar apple (150 g)
- 1 egg
- 25 g yeast
- 1 tbsp rapeseed oil
- 1/2 tsp cinnamon
- 2 dl buttermilk
- 1 dl wholemeal flour
- 5 dl wheat flour
- Optional: 1 tbsp sugar
- Optional: 1 tbsp pearl sugar as sprinkle
Instructions
- Crumble the yeast in a large bowl
- Pour the buttermilk in a cooking pot and heat it slowly. Make sure it doesn't get too hot! The temperatur shall feel like a fine line between not too cold and not too hot when you stick a little finger into the milk
- Pour the heated buttermilk into the bowl with yeast and stir until the yeast has dissolved
- Put rapeseed oil and cinnamon (and the optional sugar) in the bowl and stir
- Wash the apple and grate it on a grater. After grating it put it in the bowl and stir well
- Break the egg into a cup and whisk the egg with a fork. Pour half of the egg in the bowl (Save the other half of the egg for brushing) and stir
- Put graham flour in the bowl and stir well once again
- Put a little of the wheat flour in the bowl and stir. Continue alternating between putting a little bit of the flour into the bowl and stirring until all wheat flour is used
- Try to get a bit of air into the dough using a spoon and then start kneading it
- Finish kneading the dough on the table
- Place a piece of film over the dough and let it rise for 15 minutes
- Roll out the dough into a sausage and cut it into 10
- Put baking paper on a baking sheet
- Form 10 buns. When 1 formed put it on the baking sheet. Don't wait putting the buns on the baking sheet until you've formed all buns, because this can may cause that the buns will lose some of their lightness.
- When all buns are formed and on the baking sheet, place a piece of film over it once again and let the buns rise for 20 minutes
- When the 20 minutes have passed take off the film and brush the buns with the rest of the egg
- Optional: Sprinkle the pearl sugar upon the buns
- Turn on hot air above 200 degrees celsius and let the buns rise while the oven is getting heated up
- Put the baking sheet with buns in the middle of the oven and bake them for 15 minutes
- Take the apple buns out of the oven and let them cool on a wire rack
- Enjoy!
