Not long ago I tried this absolutely delicious casserole. The casserole looks, as you see on pictures below, amazing with the green from the zucchini with the white from the bread on top, and trust me, it tastes just as good as it looks! I ate it for days and when there were no more left of it, I made another round.
How to make Zucchini Casserole
Ingredients
- 3 zucchinis
- 2 tbsp dried oregano
- 2 tbsp dried rosemary
- 4 tbsp margarine, melted
- 3/4 tsp kicthen salt
- Freshly ground pepper
- 1/2 cup dried bread crumbs (If you can't find these at your local supermarked then follow the "How to Make Panko Bread Crumbs" you find later in this post)
- 1 clove garlic
Instructions
- Preheat the oven to 205°C
- Chop off the ends of the zucchini, and shred them on a box grater. Try to shred the zucchini on the different sides of the grater. This will do that the casserole doesn't get to humdrum
- Put the shreds into a bowl and add salt, rosemary, oregano, and half of the melted margarine. Mix it up together with a few grinds of freshly ground pepper
- Put the zucchini mix into a baking dish and make sure it's evenly spread
- Cover the mixture with foil and bake it in the preheated oven for 20 minutes
- While the zucchini mixture is in the oven you have good time to prepare the topping. Mix together the bread crumbs, garlic, a pinch of salt and the rest of the melted margarine. Put it aside until the zucchini have got its 20 minutes
- After these 20 minutes carefully remove the foil and sprinkle the crumb mix evenly upon the zucchini
- Put the baking dish with everything in it back into the oven and bake it for another 10-15 minutes or until the top is starting to brown
How to Make Dried Bread Crumbs
All you will need for making these dried bread crumbs is 700 g of white bread.
- Preheat your oven to 149°C
- If your bread is having any crusts, remove them. Make sure to remove as little of the white of the bread as possible
- Once you've removed the crust from your bread slices, cut each slice into small cubes
- Run the cubes of bread in your food processor. Run until there is no cube formed bread left, only crumbs
- Now spread the bread crumbs evenly on a baking sheet and put them in the oven once the oven has reached the necessary temperatur
- Bake your crumbs for 4 minutes
- Now stir the crumbs and then bake the crumbs for another 4 minutes. Be aware that the goal is to dry the bread crumbs, not to brown them
- Cool the bread crumbs and they're ready for you to use in your topping mix
#TIP: It's a good idea making the bread crumbs before starting preparing the zucchini. This will give the crumbs time to cool down before getting back to the oven which will give your casserole the great variety of soft and crunchy
#TIP: If you bring some of this casserole as a part of your lunch box, please do yourself (and others) the favour of bringing a piece of gum too. Not everybody is good friends with Mr. Garlic
#TIP: Serve with chili spiced chicken

Ahahah the first tip made me crack up, you are totally right, sometimes people forget that garlic is not a pleasant smell!
