Green Soup


The weather outside is cold and grey, and I, myself, have been struggling with a cold through the whole of December. But that my holiday has started has made me think I must rectifying that, the fact of having a cold. I hate going around being all sick when I'm finally having some time off. So I made a few portions of the most healthy soup I know, and believe it or not: I felt better right after. 

The soup is a combination of spinach, kale, ginger, broccoli and avocado, and it's a absolutely amazing combination, I think. It tastes delicious and can be eaten all day long because it can be eaten both warm and cold. This also means that you can eat it wherever you go, if you feel like having a portion of well-being-food when you're on the run. The soup  takes a minimal of time to make, so I don't see you having any excuses for not trying it out, haha. 

Follow the recipe below to fight that winter cold or just to make yourself a very healthy and well-tasting meal.


Ingredients

· 150g spinach (can be a frozen product) · 400 g broccoli · 1 avocado · 150g kale (can be a frozen product)  ·
· 1 leek  · 2 cloves garlic · 2 cm ginger · 1 can of coconut milk · 3 dl water · 2 tbsp olive oil · Chili powder ·

Instructions

Chop leek, broccoli, spinach, kale, avocado, ginger and garlic, and run it all through a food processer. 
Heat oil in a cooking pot and add leek, broccoli, spinach, kale, avocado, ginger, garlic, coconut milk and water. 
Let the soup simmer for 10 minutes, and then taste the food before serving with salt, pepper and chili powder.

#TIP: If your spinach and kale are frozen, zap it in your microwave until it's thawed out 
before putting it in the food processer to avoid breaking the machine 

#TIP: Top with chopped almonds, desiccated coconut and a piece of lemon
