Whole Wheat Apple and Cinnamon Cake




October is not just time for pumpkins, but also for apples - one of my favourite fruits. You can use apples for a lot of things such a bread, soup, buns and cakes. I think using apples as an ingredients in your cooking make it taste fresh and also fall-ish. Especially in this cake that I now want to share with you, the apples really make the difference! Together with cinnamon the apples make the cake taste like you can imagine fall would taste like. 

All you need for this delicious cake is:

  • 3 big apples - peeled, cored and sliced thin
  • 1 egg
  • 1 3/4 cups of whole wheat flour
  • 1/3 cup of butter
  • 1 cup of milk
  • 1 tsp of kitchen salt
  • 3 tbsp of chia seeds
  • 1 tsp vanilla sugar
  • 2 1/2 tsp baking powder
  • 2 1/2 tsp powdered cinnamon
Start by heating the oven to 235 degrees celsius. Then mix the milk, eggs and butter in a cooking pot on low temperature until the butter is melted. Now whisk together all the dry ingredients in a bowl. When its mixed put in the heated butter-milk-and-egg-mix and continue whisking until there is no flour lumps in the dough left. Cut the apples into small pieces and use a food processor (or like) to make the apple into the sort of  paste (Remember to leave a few behind for decoration!). Mix the apples pastry with dough. Then pour the dough into a spring form pan (or like) and spread it out evenly. Now put the apple slices you have laid aside on the top of the dough as a decoration. Bake the cake in the oven for 25 minutes and you'll know have a delicious fall cake.

You can eat this cake both as breakfast, afternoon tea cake and dessert because it contains whole wheat flour and it can be eaten with lots of different toppings and sides. Personally I prefer eating the cake with a small amount golden syrup, nuts, sour cream or fresh apples. A cup of warm tea is also a very good companion in this cold wetter.
