If I had to choose only one breakfast recipe to use the rest of my life, I would without a doubt choose
this one! It tastes amazing and take so (!!!!) easy to make! I often serv it when I have lady friends
over and I want to indulge them, and they love it just as much as me! It is an amazing combination of
crunchy sweetness and soft sourness, and if you're just a little bit of a berry fan you will absolutely
love this!
BAKED BERRY BREAKFAST
for six people
You will need:
400 g fresh or thawed berries after taste
1 dl honey or syrup after choice
5 dl almond milk or soy milk
1 teaspoon baking powder
1 1/2 tbsp coconut oil
1 teaspoon vanilla powder
80g pumpkin seeds
1 pinch sea salt
80 g almonds
175 g oats
2 eggs
#TIP When I make this I use a mix of forest berries, and it is something I definitely recommend
trying!
And all you have to do is:
Preheat oven to 190°C
Grease a baking dish ( about 20 x 25 cm) with 1/3 of the coconut oil
Wide berries out in an even layer in the bottom of the baking dish and set it aside
Mix oatmeal, baking powder, vanilla and salt in a bowl
Beat the eggs together in another bowl and add milk and whisk thoroughly until the mixture is smooth
Then pour syrup / honey, coconut oil, pumpkin seeds and almonds in a small bowl and mix thoroughly
Sprinkle the oatmeal mixture upon the berries in the baking dish
Pour the milk/egg mixture over the oats so they're evenly covered
Sprinkle the seed/almond mix on the top
Bake in the oven for 35-40 minutes
Allow it to cool down before serving
#TIP Cutting the almond in half before mixing them will make the dish easier to eat
